Terra's Kitchen

Friends have cooked me meals from food delivery services before and I was consistently impressed with how it tasted but never thought it was made for me. Who me? I KNOW how to cook why would I NEED a food delivery service? I KNOW how to grocery shop like a beast! I KNOW seasoning, knife skills, flavor profiles, blah blah blah. BUT, you know what I forget? I NEED help sometimes. I’m terrible at asking for this one thing in life….help.

So when @terraskitchen little cute fridge/shipping container (so smart and no waste) showed up at my apartment? I was giggling, ugly, out loud giggles. Someone was helping me without me having to ask!!! (Mom swoon) And as we opened this cute little box of goodies i also realized this was the perfect opportunity to cook with my 8 year old daughter. Everything you need is ready for prep and kids loooooooooove the instant gratification of it all. Easy, quick, there’s a picture and of course as a designer… I want to make it look better than the picture (personal nerd stuff).

I put my ego aside and deeply enjoyed the ease, the freshness, the process (fun) and most importantly, it was delicious. I’m a changed woman, I love the help and surprise with my menu and in the kitchen. Bravo @terraskitchen! A healthy, paleo friendly food delivery service that is changing how we cook. They even gave me a promo code: GENEVIEVE30.

Gen is always looking for new things to try in the kitchen, so she took a trip with Lisa and Bernie, a couple whose kids have left the nest, to a local farmer’s market. When you no longer have to take care of kids, your menus can expand, and the trio pick up fresh swordfish from the dock, delicious produce and more for a fantastic meal.

In Gen’s latest video for Mode, she tackles a problem that plagues almost every parent: how to make dinner that’s flavorful enough for adults but still appropriate for the palates of children. Pad Thai is one of her favorites, and here she shows you how to make a version of the dish that adds the spice at the end, allowing you to make milder bowls for the little ones and hotter ones for grown-ups. If you want more detail, check out Gen’s own pad Thai recipe here.

Did you know that pad Thai was actually invented in the 1930s as part of a government program to come up with an official national dish for Thailand? (I got that fact from Andy Ricker’s amazing Pok Pok cookbook).

Armed with good intentions, the right tools, and empty bellies, we went straight to the ultimate authority on all things Scandi: Sweet Paul himself. And for Sweet Paul, who grew up in Norway, nothing tastes like Christmas at home more than crispy krumkake. The result? A day of baking with my four favorite Norwegians and a sweet tradition that will be part of family Christmases for years to come.

Amid all the merriment and good cheer of the holidays is the Santa-hat-wearing elephant-in-the-room: the stress. We all feel it, and while it can’t be avoided, it can be managed. How, you ask? A good, strong cocktail that can slap the Scrooge out of anyone.

Like any good bar buddy, the Cranberry Rosemary Shrub has a story. This winter cocktail’s main ingredient – the shrub – dates back to 17th century England. Before refrigeration (warm Pinot?!), vinegar was poured over berries and other fruits to preserve them during the off-season. The mixture was left to infuse for several days, then strained. What was left was made into a sweet-and-sour soft drink or, better yet, used as a mixer for alcoholic cocktails (we totally would have been friends with those people).

For this holiday-ready drink, we enlisted the help of Shem Blum, New York Ambassador for Reyka Vodka (follow him on Instagram and Twitter). Whip it up then whip it out when the season starts setting your tree on fire.

There’s a bittersweet moment every September when tearful goodbyes to sunshine and warmth mix with shivers of excitement for the crisp, autumn days nipping at summer’s barefoot heels. The smoky smell of burning wood fills the air, chunky sweaters and worn leather boots become the new weekend uniform, and, best of all, comfort food reclaims its rightful place at the table.
